After Carnival celebrations, citizens would gather in the halls of the Basilica of Santa Maria delle Grazie to feast on this rich and flavorful dish. In the early 20th century, the stufato was also served in local factories as a hearty meal for workers.

The secret to its unique flavor dates back to the Libyan War (1911-1912), when a soldier stationed in the area, upon returning, began adding spices called “drogo” that are still used today inside the stufato. This spice blend, jealously guarded by the “stufatari” (stew makers), has been passed down from generation to generation, keeping the authentic and traditional taste alive.
